  Corn Bread and Bacon Stuffed Pork Chops
Prep: 20 min   Cook:  13 min    Bake:  1 hr   6 servings

You will need:
       6 pork loin chops (1 to 1 1/4 inch thick)
           ask the butcher to spilt for stuffing
       4 slices of bacon, cut into 1/2 inch pieces
           try apple smoked bacon for extra flavor
       1 medium onion, chopped (1/2 cup)
       1 cup cornbread crumbs
       1/2 cup shredded Cheddar Cheese (2 oz.)
       1/2 teaspoon salt
        1/2 teaspoon marjoram
       1/4 teaspoon pepper

Preheat Oven to 350 degrees.
In a large skillet, cook bacon over medium heat, stirring occassionally until crisp.   Stir in onion, until crisp.  Add cornbread       crumbs and cheese.   Cook 2 to 3 minutes and remove from flame.
Sprinkle both sides of each pork chop with salt, peper, marjoram mixture.
Fill pork pockets with stuffing.  In same skillett, cook pork until brown, turning once.
Place pork chops in an ungreased baking pan.  Cover tightingly with tin foil.  Bake 45 minutes.
Uncover pork and bake approximately 15 minute more, or until pork is no longer pink when cut close to the bone.

Enjoy!

Suggestions:
  • Add a dash of apple sauce while sauteeing the stuffing, and glaze the pork chops with a light layer of apple sauce before baking.
  • Serve with fresh string beans and apple sauce.


Pork Chops with Rye Bread Stuffing
Prep: 20 min   Bake:  45 min    6 servings

You will need:
       6 pork loin chops (1 to 1 1/4 inch thick)               1 large egg, lightly beaten with 3 tablespoons water
           ask the butcher to spilt for stuffing                     1 tablespoon flour
       3 tablespoons butter                                                  3/4 cup chicken broth
       1 medium onion, finely chopped                            salt and pepper
       1 large clove garlic, minced
        3 1/2 cups soft rye bread crumbs

Preheat oven to 350 degrees.
In saute pan, melt 2 tablespons butter over medium heat.  Add the onion and garlic and cook about 5 minutes until softened.
Scrape into large bowl and add bread crumbs, 3/4 teaspoon salt, and 1/4 teaspon pepper.  Add the beaten egg and fod until             moist.
Season both sides of chops with salt and pepper and fill with stuffing.  Place in baking pan and cover.  Bake for 45 minutes, or      until pork is no longer pink when cut close to the bone.
Remove lid and place under the broiler 3 to 5 minutes to brown.
If desired, thicken the  meat jucies with flour and butter and pour over pok chops.


Short Ribs (A Great Crock Pot Trick)
Prep: 15 min  Cook: 4-6 hours in crock pot)    4 servings

You will need:
       5 bs  Short Ribs (ask the butcher to separate and prep)
       2 Cans Pastene Brand Kitchen Ready Tomatoes
       2 Onions - chopped
       4 Carrots - sliced
       2 White Potatos                                                 
       2 Whole Bay Leaves                          
       Salt and Pepper
   

Once sepated, dredge ribs in seasoning.  Add tomatoes and other vegatebles.  Cook one low for 4-6 hours.
